Today is a big day in football for all of us that live in Houston. The Houston Texans have made it into the NFL playoffs, and today’s game is the very first playoff game EVER in Texans’ history! In honor of this big football day, I’ve found some healthier options for an appetizer, a main dish, and a lucious dessert you can serve and enjoy during the big game (or any time you like!). I have listed photos from the websites in which these recipes originate from, as well as the link straight to the sites in case you’d like to see what other healthy bites they have created!
Super-Healthy Stuffed Peppers
(My own recipe creation!)
1/2 lb. ground turkey
1/2 lb. ground chicken breast
4-6 large bell peppers (any color)
1 can diced tomatoes, drained
1 small can tomato sauce (low-sodium!)
1/4 to 1/2 small head of cauliflower, finely diced
1 cup carrots, finely diced
1 tbsp italian seasoning
2 tsp garlic powder
salt, to taste
Mince the cauliflower and carrots in a food processor/blender, or chop very finely by hand. In a large mixing bowl, combine turkey, chicken, diced tomatoes, tomato sauce, cauliflower, carrots, italian seasoning, garlic powder, and salt. Mix throughly. Cut the top off each bell pepper, hallowing out the seeds and inside of the peppers (discard the “guts” of the pepper!). Stuff the chicken and turkey mixture into each hallowed pepper, filling all the way to the top. Place stuffed peppers in a Crockpot, as many as you can get in at one time. Place the tops of the peppers back once all stuffed peppers have been put in pot. Add 3/4 cups water to bottom of Crockpot (careful not to pour it on the peppers!). Cover and set Crockpot on low for 8-10 hours.
